Great question! (Yes, we made it up!) Simply fruit, sugar and fresh lemon juice combined with all natural flavour add-ins – real wine, alcohol, spices, and herbs. We do not use pectin, there’s nothing wrong with adding it…it’s a personal preference and, unless you need to have your spoon vertical in the jar, not really necessary 😉
