Our Story
Lee Murphy has been making fruit shine since 2002 — and she hasn't stopped experimenting since.
What started on a BC farm with a copper kettle and a deep respect for peak-season fruit has grown into one of Canada's most loved artisan preserve companies. The philosophy hasn't changed: find the best locally grown fruit, catch it at its ripest moment, and let it do the talking.

From the Farm to the Jar
The Preservatory was born in the Fraser Valley of British Columbia, where the summers are warm, the orchards are generous, and the fruit is extraordinary. We work with local BC farmers to source ingredients at their absolute peak, a great preserve is only ever as good as what goes into it.
Every batch is made using traditional preserving methods, slow-cooked the old-fashioned way. No added pectin. No preservatives. No shortcuts. Just fruit, creativity, and twenty-plus years of knowing exactly when something is ready.
Jam, But Make It Interesting
We've never been content with ordinary. Our seasonal creations push classic preserves into unexpected territory; think Peach with Jalapeño & Tequila, Pineapple with Ginger & Sake, or Figs with Walnut Wine. New flavours are crafted each season, inspired by what's growing, what's interesting, and what pairs beautifully on a cheese board at the end of a long day.
For those who love the classics, our Plain Ol' line keeps things simple and spectacular, simply exceptional fruit, done right.
Nothing Goes to Waste
We believe a kitchen that wastes nothing makes the best food. Our Provisions line was born from that idea; BC-crafted vinegars and syrups infused with the trimmings from our jam-making process. Cherry skins. Walnut pieces. Rhubarb ends. What others would discard, we turn into something worth savouring.
It's a small, sustainable ecosystem; and honestly, some of our most interesting products have come out of it.

The Cookbook
Lee's love of preserving is captured in The Preservatory Cookbook, published by Random House — a collection of seasonally inspired recipes for artisanal preserves. It makes a pretty great gift, too.
