Our Story

We've been making fruit shine since 2002.

It all started with a horse - as all good stories do! What started on our farm with a copper kettle and way too much fruit, grew into a beloved brand. The Preservatory has been a way of life for us and the goal of creating delicious experiences continues to fuel our innovative offerings.


From the Farm to the Jar

It was a match made in food heaven. Who else but an chef and farmer/winemaker could come up with the seasonal, innovative and incredibly delicious flavour pairings that make up The Preservatory's line of jams and preserves?

Founded in South Langley, British Columbia, Lee and Patrick Murphy launched The Preservatory in 2002 with a simple but inspired philosophy, that preserves could be so much more than something spread on toast. Bold, unexpected flavour combinations crafted from the finest local, seasonal ingredients quickly set The Preservatory apart.

Today, Lee continues to push the boundaries of what a preserve can be. From the breakfast table to the cheese board, from glazing a roast to elevating a cocktail, The Preservatory's creations are as versatile as they are delicious. Each jar is a little adventure; whether it's the bestselling Fig and Walnut Wine, a spicy little Peach with Jalapeno & Tequila, or a delicate floral preserve that surprises and delights with every spoonful.

And then there's the packaging. Each jar is as beautiful as what's inside, making The Preservatory's preserves as perfect for gifting as they are for savouring. Whether tucked into a hostess basket or displayed on a pantry shelf, they are impossible to resist.

The Cookbook

Lee's love of preserving is captured in The Preservatory Cookbook, published by Random House; a collection of seasonally inspired recipes for artisanal preserves. It makes a pretty great gift, too.

Our preserves are meant for pairing and sharing, on a cheese board, as a glaze for roast chicken, spooned over fresh baked scones, or eaten straight from the jar at midnight. (We don't judge.)
