We source our apricots and other stone fruits from a wonderful organic family farm in the Similkameen Valley. It’s such a treat to work with passionate farmers who take great pride in their crops. French tarragon is my favourite herb; its subtle liquorice notes are a perfect match for the floral taste of the apricots. Tarragon is really the only herb that goes with almost everything. This preserve is so versatile; it does well in both sweet and savoury dishes.
